Place the roes in a food processor with 150 g/ 5½ oz/¾ cup softened butter and 1 finely chopped garlic clove. Blitz together, then stir in1 tbsp fresh thyme leaves. Place a spoonful on each scallop, add 1 tbsp dry white wine, then sprinkle a thin layer of fine fresh breadcrumbs over each shell and bake for 6 minutes, until crisp and golden.
