SERVES 2 TO START
Preheat the oven to 230ºC/450ºF/gas mark 8. Remove the roes from 6 scallops in the cup shell and take off the white muscle and any black bits. Place the roes in a food processor with 150 g/ 5½ oz/¾ cup softened butter and 1 finely chopped garlic clove. Blitz together, then stir in1 tbsp fresh thyme leaves. Place a spoonful on each scallop, add 1 tbsp dry white wine, then sprinkle a thin layer of fine fresh breadcrumbs over each shell and bake for 6 minutes, until crisp and golden. Season with sea salt.
AT THE FISHMONGER
Ask the fishmonger to open the scallops on the cup side of the shells rather than on the flat side. If they have already been opened on the flat side, ask for 6 cup shells, so that you can transfer the scallop meat to them.
