February Challenge - protein

There are three macro-nutrients that make up most foods: carbs, fats, and proteins. For February, post a photo of something you made with a protein base. This doesn't need to be meat, of course, legumes, nuts, and some leafy greens like spinach and kale are welcome!

Post a picture, and if you are so inclined, a link to a recipe posting in that category. Multiple entries are allowed, this challenge is all about sharing and learning from each other.

Also, if you have suggestions for next month's challenge, please post them as a comment below.

I keep forgetting to take pictures of my food, but tonight I remembered! (This meal was prepared before the end of the month UTC, but then we ate and cleaned up and had to post. :-) )

Pistachio-crusted cod -- trust me; there's cod under there. I can't post the recipe because it's from a book, but the topping is ground pistachios, panko bread crumbs, shallots, parsley, and some seasonings. The recipe called for baking at 300F, which is rather lower than I usually do fish.

I would never have guessed from the photo that this was fish; it almost looks like a pilaf!

You can see bits of the fish peeking out if you know what to look for -- there's a tip at the bottom left, and a patch about halfway up and more toward the left, and a couple smaller ones. But I did say "crusted". :-) (Well, it's only crusted on one side; there's no coating between the fish and the plate. But it wouldn't look any different if there were.)
