Bread maker bread without yeast?
I have a family member who reacts poorly to homemade bread with yeast in it. (Store-bought is fine, somehow. IDK.) I don't want to exclude him, but I also don't want my nice convenient bread maker to go unused. I've read that yeast can be swapped out for an equal amount of baking soda and lemon juice (so, 2 tsp yeast = 1 tsp baking soda + 1 tsp lemon juice), but both times I've tried it, the loaf hasn't risen at all in the machine. Does it need more time to rise? Is there a specific order I should be adding the ingredients? Or is there another alternative to yeast that will work in a bread maker?
