January challenge - Veggies!
Happy New Year! 2020 was an interesting year in many ways, and 2021 will hopefully be a joyous and happy year for all.
That being said, let's start the new year off right with a challenge focused on something healthy - vegetables! It's hard to eat too many, and they can be prepared in an infinite number of ways, from appetizer to main course to dessert, curried or baked or boiled or fried.
Post a photo of a dish or meal where the main focus or ingredient is a vegetable. (We're going with a rather broad definition here - peppers, beans, tomatoes etc. all count.) If you're willing to share your recipe, post it in the Recipes category and add a link to your post here.

Stir-fried veggies with tofu (over Himalayan red rice):
Fresh: sugar snap peas, diced carrot, diced shallots, minced ginger.
Canned (leftovers from something else): baby corns, bean sprouts.

@Monica Cellio What is that burgundy coloured thing in that first pic?
@aditya98 that's Himalayan red rice, which the package said is good with stir-fries. (It's a little chewier than brown rice.) I edited to add that info.
