Which live Canadian oysters best for steaming?
I live in Toronto. I can't find living oysters that:

1. got NO worms and parasites. 

2.  can be steamed with garlic scallions and vermicelli:  [蒜蓉蒸生蚝](https://www.youtube.com/results?search_query=%E8%92%9C%E8%93%89%E8%92%B8%E7%94%9F%E8%9A%9D+). I don't eat raw seafood. 3. can be easily bought at like Loblaws,  Whole Foods. I don't live near specialist seafood stores like [Diana's Seafood](http://www.dianasseafood.com/), [Honest Weight](https://honestweight.ca/).
 
I followed [this  video](https://www.youtube.com/watch?v=-zUzklQSDjc), [these instructions](https://themeatmen.sg/recipe-steamed-oysters-with-garlic/) and [Jamie Oliver's](https://www.jamieoliver.com/recipes/seafood-recipes/cantonese-style-steamed-oysters) to steam [*Crassostrea virginica*](http://www.canadianliving.com/food/food-tips/article/discover-oysters) bought at Loblaws (like those branded [Malpeque or Raspberry Point](http://www.canadianliving.com/food/food-tips/article/discover-oysters)), but meat shrinks to teaspoon size. What did I bungle?
