Tags - can't create, can't find relevant existing

I was trying to post a question about how to process my surfeit of ground turkey before freezing it, but apparently I can't create tags on the fly, and none of the existing ones fit.

Off the top of my head, missing useful tags I could have used include:

  • turkey
  • poultry
  • food-storage
  • food-safety
  • freezing

If new users can't create tags, there needs to be an effort to build out a generic tag tree, ideally hierarchical, that includes categories like meat, vegetables, fruit, allergens, common cooking techniques, etc.

There's a tag for "ginger" but not "spices"? ("spicy" and "spices" are not at all the same thing) "Mexican-cuisine" but no other regional markers?

(Don't get me wrong: This site is a nice proof of concept but needs some work to get out of beta.)

I'm not sure why exactly you can't create tags, but myself, I would take the pragmatic approach here.

If you genuinely think that the question is on topic, just tag it with anything (something appropriate if possible), leave a comment specifying your desired tags, and flag the question for moderator attention to have the tags replaced.

Someone will come along soon enough and fix the tags, and in the meantime, you'll be able to get answers to your question.
