## Fasolada

This Greek soup is made with white beans, vegetables, and olive oil in a tomato base, flavored with paprika (I used smoked).  I get most of my fresh vegetables from folks who sell "ugly" produce that stores won't take because it's too big, too small, weirdly shaped, etc.  Soup doesn't care if your produce is ugly.

In the picture it's accompanied by a rich sourdough bread and dates.

I made approximately [this recipe](https://www.mygreekdish.com/recipe/traditional-greek-bean-soup-recipe-fasolada/).  It definitely needs more paprika than specified there, and cook the onions for a few minutes before adding the other vegetables.
